Savory Cabbage Roll Soup

INGREDIENTS

  • 1 lb ground pork sausage (I used Jimmy Dean all natural)
  • 1 medium onion chopped
  • 1 small head green cabbage cored and coarsely chopped
  • 3 large cloves garlic minced
  • 1 (14.5 ounce) can fire roasted tomatoes
  • 8 cups low sodium chicken broth
  • 1 tablespoon Cajun seasoning (more or less depending on taste)
  • 1/4 cup tomato paste
  • 3 tablespoons brown sugar
  • 1/2 cup uncooked long grain white rice

INSTRUCTIONS

  1. In large pot or dutch oven brown sausage over medium heat. When almost fully browned add onion and cook for 3-4 minutes. Add cabbage and cook until soft; approximately 15 minutes. Add garlic and cook for 1 minute. Add fire roasted tomatoes, chicken broth, Cajun seasoning, tomato paste, brown sugar and rice.
  2. Bring to a low boil. Turn down to simmer and cook about 30 minutes or until rice is tender.
