Savory Cabbage Roll Soup

INGREDIENTS
- 1 lb ground pork sausage (I used Jimmy Dean all natural)
- 1 medium onion chopped
- 1 small head green cabbage cored and coarsely chopped
- 3 large cloves garlic minced
- 1 (14.5 ounce) can fire roasted tomatoes
- 8 cups low sodium chicken broth
- 1 tablespoon Cajun seasoning (more or less depending on taste)
- 1/4 cup tomato paste
- 3 tablespoons brown sugar
- 1/2 cup uncooked long grain white rice
INSTRUCTIONS
- In large pot or dutch oven brown sausage over medium heat. When almost fully browned add onion and cook for 3-4 minutes. Add cabbage and cook until soft; approximately 15 minutes. Add garlic and cook for 1 minute. Add fire roasted tomatoes, chicken broth, Cajun seasoning, tomato paste, brown sugar and rice.
- Bring to a low boil. Turn down to simmer and cook about 30 minutes or until rice is tender.
